Herb Starter Recipe

Gourmet Edible Flower Kit

GOURMET EDIBLE FLOWER GROWING KIT

CORNFLOWER Blue Ball

Sowing outside: Sow seed from end April-May after risk of frost and they will flower throughout the summer. Sow ¼” deep and up to 12” apart. Cover with soil and water.

Uses: Mix with other flowers and herbs for a salad, omelettes, pastas and garnishes.

TIP: If you want an earlier spring flowering, sow in August through to October.

CALENDULA Calypso Orange

Sowing outside: April to May. Sow seeds thinly at depth of ½” and cover with soil. Germination takes 5-10 days. For winter or early spring flowering, sow in late summer or early autumn in a propagator and grow on in a conservatory or cool greenhouse.

Uses: Slight peppery taste. Tangy in breads & soups and beautiful in a salad. Fresh or dried leaves can be used in place of saffron to colour rice or butters.

NASTURTIUM ‘Tom Thumb’

Sowing outside: From April when the soil has warmed up, sow thinly and cover with fine soil or scatter seeds and lightly rake in. Prefers full sun. It is advisable not to sow in a rich soil otherwise you will get plenty leaf and no flower.

Uses: Salads, desserts, baking, cocktails, butters, with cream cheese and as a garnish for steak and casseroles.

Flowers: From May to September.

TIP: Dead-head the plant to prolong flowering.

Viola

Sowing outside: Best to sow seeds where they are to flower. Sow in Spring to late Summer & early Autumn. Sow 3mm deep and cover with soil.

Uses: Great addition to salads, desserts and garnishes. These little beauties were made for baking and can be crystallized and used to decorate cakes and desserts.

Flowers: It will flower for most of the year if it’s happy.

Tip: Edible flower petals look fantastic in summer drinks. Place petals in your ice-cube tray. You can always add a piece of mint leaf, top up with water then freeze.

HERB STARTER KIT

CORIANDER

Sowing outside: Sow seed from end April in shallow drills or scatter seeds to make clumps. Cover with soil and water. Don’t transplant young seedlings. Harvest when young and fresh.

Uses: Leaves and stalks are edible. Combine with green chilli, garlic and thyme for a great dressing.

TIP: Add to recipes either fresh or at end of cooking as prolonged heat reduces the flavour.


CHIVES

Harvest: Cut any time once plant established to about 20cm. Don’t cut lower than 5cm to ensure a continuous crop.

Uses: Great with eggs, potatoes, soft cheese, omelettes, salads and sauces.

TIP: Chives should be added either fresh or towards end of cooking as they quickly lose their flavour.


DILL

Sowing outside: From April when soil has warmed, sow thinly in drills and cover with fine soil or scatter seeds and slightly rake in. Prefers full sun.

Harvest: Pick when young and fresh.

Uses: Great companion to fish and as an ingredient for soups and sauces. It can also be added to salads, salad dressings and used when pickling.

TIP: Add fresh Dill towards end of cooking.


FRENCH PARSLEY

Sowing outside: Either April when the soil has warmed or August through winter (under protection of a cloche). Sow in drill or scatter in a clump, cover with soil and water well with near-boiling water. Germination can be slower than others, but keep watered.

Harvest: Any time.

Uses: An almost endless list so here’s a few… soups, salads, sauces, pies and stews.

TIP: Chewing parsley can mask unpleasant smells in the mouth and sweeten your breath.


GREEK BASIL

Harvest: July and August (if grown outside).

Uses: Salads, tomato based dishes, fish, sauces, chicken, mixed with butter, cheese, stuffing, fresh fruit desserts and cocktails.

TIP: When using Basil, rip or tear leaves rather than cutting as the edges will become damaged and turn black.

KIDS EDIBLE GARDEN KIT

CARROT nantes

Sowing outside: from April to June. Sow thinly into growing site ¾ “ deep. Sow carefully so you don’t have to thin out seedlings later. Grow in a weed free,light, well-drained soil. Great for growing in containers if you have limited space. Grow alongside spring onions, leeks or mint to help deter carrot root fly.

Uses: Soups,stews, casseroles,vegetable dishes,cakes and salads.

TIP: Carrots don’t like freshly manured soils, if preparing a veg bed, best advised to do so the previous autumn before sowing in spring.

CHERRY TOMATOES

Sowing outside: Transplant your tomatoes into either a grow-bag or pot in a sunny position once all risk of frost has passed. When ready to plant out, acclimatise by placing outside during daylight hours and returning indoors during darkness over a period of 7 days. Transplant the seedlings you have grown indoors to a sheltered spot. Water often to keep compost moist. Feed weekly using tomato food once first fruits have formed. If sowing directly outside, sow seeds from end May after risk of frost has passed. You may have to stake them.

Harvest: When ripe from July to September.

Uses: Salads, sauces, pastas, chutneys, roasted, cheeses.
